  • 1/2 pkg (6 oz) Casbah® Original Couscous
  • 1 tomato, chopped.
  • 1 cup chopped cucumber.
  • 1/3 cup thinly sliced red onion.
  • 1/4 cup finely chopped fresh parsley.
  • 3 tbsp lemon juice, divided.
  • 2 tbsp olive oil.
  • 1/2 tsp salt, divided.
  • Cracked black pepper to taste.


  • Prepare the Casbah® Couscous according to package directions. Let it cool down in the refrigerator or on a kitchen counter.
  • Toss the couscous with all the chopped vegetables, the olive oil, and the seasoning.
  • Serve cold with garnish of choice. Enjoy!
