This warming stew featuring our Casbah® Rice Pilaf makes for the most cozy and nourishing dinner.

Ingredients
Stew:
- 1 package Casbah® Rice Pilaf
- 2 cups kale, chopped
- 1 cup crushed tomatoes
- 4 cups mushrooms, sliced
- 1 red pepper, sliced
- ½ cup onions, chopped
- ½ cup chickpeas
- ½ cup vegetable stock
- 2 cloves garlic, minced
- 2 tbsp. olive oil
- ½ tsp. paprika
- 1 tsp. cumin
- ½ tsp. garlic powder
Directions
- Cook the Casbah® Rice Pilaf according to package instructions.
- In a pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes. Add the mushrooms and sauté for an additional 3-5 minutes.
- Add the crushed tomatoes, red pepper, chickpeas, vegetable stock, paprika, cumin and garlic powder. Bring to a boil and then reduce heat and simmer for 15 minutes.
- Add the kale and simmer for another 1-2 minutes until the kale has softened.
- Divide the rice between 4 bowls and top with the vegetable stew.
