Ingredients

Pearl Couscous Salad: (Meant to make enough for multiple lunches/meal prep – divide the recipe in half if preferred.)

  • 2 packages Casbah® Pearl Couscous, cooked and cooled
  • ½ cucumber, finely chopped
  • 1 orange pepper, finely chopped
  • 1/3 cup red onion, finely chopped
  • 4 radishes, finely chopped
  • 3 tbsp. olive oil
  • 1 lemon, juiced
  • Pinch of sea salt
  • Pinch of black pepper

Optional Add-ins:

  • Feta cheese
  • Splash of balsamic vinegar
  • Any other vegetable of choice

Falafel Bites with Tzatziki Dip:

  • 1 package Casbah® Falafel Mix
  • 1 cup Greek yogurt
  • 1/3 cup cucumber, grated
  • 1 tbsp. fresh lemon juice
  • 2 tsp. fresh dill, minced
  • Pinch of sea salt

Directions

Instructions for Pearl Couscous Salad:

  1. Cook the Casbah® Pearl Couscous according to package instructions. Let cool while you prepare the other ingredients.
  2. Chop all the vegetables and add to a large bowl. Add in the cooled pearl couscous.
  3. Drizzle with the olive oil, lemon juice, salt and pepper. Stir until combined.
  4. Add in any additional toppings if desired.
  5. Store in the fridge and enjoy as meal prep throughout the week!

Instructions for Falafel Bites with Tzatziki Dip:

  1. Using a small cookie scoop, form the Casbah® Falafel Mix into small balls. Cook according to package instructions.
  2. In a bowl, mix together the Greek yogurt, grated cucumber, lemon juice, fresh dill and salt. Stir until combined.
  3. Serve the falafel bites with the tzatziki dip.
