This Moroccan inspired bowl featuring our Casbah® Original Couscous creates a flavorful lunch or dinner for you and your family to enjoy.

Ingredients

Bowl:

  • 5 lb. steak, strips
  • 1 cup carrots, sliced
  • 1 cup red peppers, sliced
  • 1 cup broccoli, chopped
  • 1 cup snap peas
  • ½ cup red onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp. olive oil
  • Optional garnish: parsley

Marinade:

  • 1 tsp. cumin
  • 1 tsp coriander
  • 1 tsp. paprika
  • ¼ tsp. cinnamon
  • ¼ tsp. ginger
  • 1 clove garlic, minced
  • 1 tbsp. red wine vinegar
  • 1 tbsp. honey
  • 2 tbsp. olive oil

Couscous:

  • 1 package Casbah® Original Couscous
  • ½ cup raisins
  • ½ cup almonds (whole, slivers or sliced – as desired)
  • 1 tbsp. olive oil
  • 2 cups vegetable broth
  • 1/8 tsp. cumin
  • 1/8 tsp. coriander
  • 1/8 tsp. paprika
  • 1/8 tsp. cinnamon

Directions

  1. Mix together all of the ingredients for the marinade. Toss the steak strips in the marinade and let marinate for 30 minutes in the fridge.
  2. While the steak is marinating, cut and prepare all of the other ingredients.
  3. Mix the uncooked couscous with the cumin, coriander, paprika and cinnamon. Cook according to package instructions, with one optional change of omitting the water and using vegetable broth instead. Once fluffed, add the raisins and almonds.
  4. Heat a skillet to medium heat. Add the steak and cook for 5-6 minutes. Add the vegetables and 1 tbsp. olive oil if necessary and cook for another 5-6 minutes, until meat and vegetables are cooked to desired doneness and tenderness.
  5. Divide all of the ingredients between 6 bowls and top with parsley.
