This warming stew featuring our Casbah® Rice Pilaf makes for the most cozy and nourishing dinner.

Ingredients

Stew:

  • 1 package Casbah® Rice Pilaf
  • 2 cups kale, chopped
  • 1 cup crushed tomatoes
  • 4 cups mushrooms, sliced
  • 1 red pepper, sliced
  • ½ cup onions, chopped
  • ½ cup chickpeas
  • ½ cup vegetable stock
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • ½ tsp. paprika
  • 1 tsp. cumin
  • ½ tsp. garlic powder

 

Directions

  1. Cook the Casbah® Rice Pilaf according to package instructions.
  2. In a pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes. Add the mushrooms and sauté for an additional 3-5 minutes.
  3. Add the crushed tomatoes, red pepper, chickpeas, vegetable stock, paprika, cumin and garlic powder. Bring to a boil and then reduce heat and simmer for 15 minutes.
  4. Add the kale and simmer for another 1-2 minutes until the kale has softened.
  5. Divide the rice between 4 bowls and top with the vegetable stew.
